Dairy Free Chocolate & Peanut Butter Cookies

I love baking. In all honesty I'm not amazing at it but I do have a few recipes that are fail safe for me!
I've spent many an hour disappointed at my goods as I'm lactose intolerant and dairy free butter seems to react differently but I'm getting there, so today I thought I'd share my dairy free cookies!

These cookies contain two of my fave things, chocolate & peanut butter! So without further ado;
125G Softened butter (I used Vitalite)
100g Peanut Butter - you can use smooth or chunky
50g chocolate spread (I used Organic Chocolate Spread by Plamil)
225g granulated sugar
1 egg
150g plain flour
pinch of salt
optional - 75g of unsalted peanuts
Preheat your oven 190oC/Gas mark 5 and line cookie sheets with baking paper
Beat chocolate spread, peanut butter & butter together until creamy .
Add sugar and mix well
Add the egg a little at a time and mix until everything is well combined
Sieve the flour in a little at a time and mix well. Add the salt & optional peanuts.
Wrap dough in cling film and allow to chill for about half an hour
Form the dough into balls on the prepared trays and leave around 5cm for them to expand. Gently flatten with your hand.
Bake in the oven for around 15 mins or until brown, then transfer to a wire rack and allow to cool.
There you go! Now all you have to do is try not to eat them all at once!
