I love baking. I love eating cakes and cookies too but thankfully my Lactose intolerance does make it difficult, which is a blessing and a sin!
I've recently been pinning a lot of iced cookies and with a desire to bake, tonight was the night to do it!
I decided to start simple, nothing too fancy just to see if I like doing it and if they actually came out okay. I'm quiet pleased with my result for a first attempt, even if I did run out of icing sugar and now feel sick. doh.
Dairy Free Sugar Cookies
350g plain flour
100g self raising flour
125g granulated sugar
125g dairy free butter (I used Lactose free)
125g honey or golden syrup
1 large egg
Sift the flour and mix with the sugar. Combine well.
Add the butter and rub with your fingers until you have a fine breadcrumb consistency and it's all well combined.
Lightly beat the egg and add to the mixture along with the honey and mix until the dough forms a ball.
I got around 25 decent size cookies from this recipe. I had them in the oven on 150 for about 15 mins.
I then just played around with icing sugar, adding food colouring!
I deffo think these are something I'll be making again as I really enjoy baking and the more arty side of decorating and with these, there are no boundaries!
