Chocolate Orange just screams Christmas to me. It's one of those treats I'll only buy at Christmas and consume like I'm never going to eat another one, so when the hubby was bugging me to make him some more rocky road I thought why not? With that chocolate orange rocky road was born!
Rocky road is one of those treats you can jazz up anyway you want, a personal fave of mine is milk chocolate, oaty biscuits, glacier cherries and marshmallows! It's a great cheeky chocolate hit to grab on the go and it makes for perfect film watching snacks!
So without further a do, here's my recipe for decadent chocolate orange rocky road!
You will need:
(Makes 12 bars)
1 Whole Chocolate Orange
1.5 Tablespoons Honey
100g Digestive Biscuits
Double the recipe for 24 bars
First break up the chocolate into chunks and melt it with the honey and butter over a bain marie. Make sure the boiling water doesn't touch the bottom of the bowl or it can burn the chocolate.
While the chocolate, butter and honey are melting. Place the biscuits in a seal-able sandwich bag and bash with a rolling pin until you have pieces of all different sizes. You do not want to smash all of it up into crumbs!
When the liquid mixture is melted, remove from the heat and add the smashed up biscuits and marshmallows and mix it all together. Pour the mixture into a wax paper lined tray and pop it into the fridge.
Allow it to set in the fridge for around an hour to two hours.
Optional step: cover with a generous dust of icing sugar
Cut into 12 bars.
